 1/4 cup raw cashews
 2 large cloves garlic, peeled
 5oz cauliflower florets 1/3 cup water 3 tbsp vegan mayo
 1 1/2 tbsp nutritional yeast
 1/2 tbsp miso paste
 1/2 tbsp Dijon mustard
 1/2 tbsp lemon juice
 1/2 tsp onion powder
 ½ tsp ground pepper
 1 tsp sea salt
 7oz canned quartered artichokes, drained
 5 oz frozen chopped spinach, defrosted and drained 2 (15oz) cans white beans, drained (I’m using cannellini) 

 Tortilla chips, raw veggie, or toasted sourdough, for serving

 1. Preheat oven to 350°F. Grease an oven-safe dish and set aside.
 2. In a large microwave-safe bowl, combine cashews, garlic, cauliflower, and water. Cover lightly with plastic wrap. Microwave on High until the cauliflower and cashews are soft, about 5 to 7 minutes.
 3. Add softened veggie mixture, mayonnaise, nutritional yeast, miso, mustard, lemon juice, salt, and pepper to a blender and blend until smooth.
 4. Add the artichokes and spinach and pulse (don’t blend) until just combined.
 5. Transfer to the prepared oven dish, stir in the drained beans, and bake until bubbly about 30 minutes. Increase oven to a broil and let broil about 3 mins, until starting to brown in some places.
