@samlowcooks: Ep 94 | Soy Sauce (revised) – HOW TO SHOP AT YOUR LOCAL ASIAN GROCER Before soy sauce, there was jiang, the original fermented paste condiment in China, made from grains, beans, and meat. Soy sauce evolved as the liquid byproduct of this fermentation process, eventually becoming the essential seasoning we know today. There’s no single “best” soy sauce, each type has a purpose. Light soy sauce varies hugely in quality and is primarily used for seasoning. In general, the more expensive ones are better for raw or finishing applications, while cheaper to mid-range versions are great for everyday cooking. Dark soy sauce is mainly for colour and depth, and only used in small amounts. You’ll also find seasoned soy sauces, as well as sweetened and thickened soy sauces, kecap manis, and thick soy pastes, each bringing their own flavour, sweetness, and texture to different dishes. It takes a bit of trial and error (that’s part of the fun). I usually keep 3–5 different soy sauces in my pantry at all times, from budget to premium, light, dark, and seasoned. I think a lot of people (at least in the USA) also mistake light soy sauce for "lite", which is low sodium. They don't realize light is often saltier.

I learned to brew my own soy sauce using koji spores, soy beans, wheat, and brine. I let that ferment for two years and drain it. I don't pasteurize it though.

would the hydrolyzed light soy sauce potentially be lower in histamine given that it isnt traditionally fermented? i just know that fermented foods can be difficult for those with histamine sensitive conditions such as MCAS

I’ve watched a lot of your videos. Have you touched on sauces titled “seasoning sauce” as opposed to seasoned soy sauce? For example, my FAV is the golden mountain brand and I use it for everything. I find it to be super versatile but I’ve always wondered what the difference is.
