You can remove mill scale with a bit of heat from a torch and what little is left can be buffed off. Carbon is goo cooking metal for sure

I had some left over 1/2 inch plate steel and I made it into an awesome grill griddle. I sand blasted the mill scale and ground the surface flat then seasoned like cast iron and its the best thing I ever made for my grill. stays hot and never stops the sizzling

All steel have carbon in it. Hot rolled steel scale is taken off in the milling process by high pressure water. High carbon steel is more prone to rust and a little more brittle depending on the grade. But it is not gluten free.

Detroit style pizza started with automotive factory drip trays. Saw a picture once of steak fajitas being cooked on an old chevrolet car hood. I have an expanded sheetmetal grilling grate for the campfire.

It doesn’t matter if it’s hot rolled or cold rolled if you put heat to carbon steel you will get mill scale that’s why when you have a old bbq grill you can scrape off layers of rust 🤠
