Eating braised duck at your favourite hawker stall is preferred over cooking at home because hawkers use aged master stocks and specialized techniques that are too time-consuming and complex to replicate at home. I made a whole Braised Duck feast for the family today, and the ingredients cost $25.10! For a family of 6, that works out to slightly over $4 per pax. Honestly? Might as well save the two hours of hassle and just eat at the hawker stall. 😂 If anything, spending an entire afternoon sweating over a boiling pot of lor gave me a whole new level of respect for the hawkers who wake up at 4 AM to do this every single day. Support your local braised duck stalls! But jokes aside, there is nothing quite like the therapeutic experience of the sight and smell of traditional braised duck filling the house on a Saturday morning. It is a labour of love, and seeing the kids devour this with warm porridge makes the effort worth it. Since many people think making braised duck at home is too difficult, I am dropping my personal recipe and exact cost breakdown. SAVE this if you want to suffer through 2 hours of cooking for your next weekend family dinner! 📌👇 The $25.10 Breakdown: Whole Duck: $14.90 Dark Soya Sauce: $3.00 Tao Pok: $1.50 Tao Kua: $1.80 Eggs: $2.50 Coriander: $1.40 Spices (Cinnamon Powder, Stick, Star Anise): Scavenged from the kitchen! 🪵 The Duck & Broth: - Clean the whole duck thoroughly with salt (inside and out) - Rub 1 tbsp of cinnamon powder directly into the inside cavity. - In a large pot, sauté 2 thumb-sized pieces of rock sugar with a little oil until melted. - Add 4-5 star anise, one large cinnamon stick (6-7cm), 4 liters of water, and the chopped duck head, neck, and webs. Boil for 15 mins. - Submerge the whole duck and add 250ml of super dark soya sauce. - After 30 mins, drain off half the broth, then add another 250ml of normal dark soya sauce. Braise for another 30 mins. - Remove the duck to cool before chopping. Add 1 packet of tow pok and 2 large pieces of tau kua to the remaining lor (braising liquid) to soak up all that flavor. The Perfect Ramen-Style Eggs: - Boil 6 eggs at a simmer for exactly 6 minutes, then immediately plunge into tap water to stop the cooking before peeling. - Marinate in a ziplock bag with 1 tbsp dark soya sauce, 2 tbsp Daiso light soya sauce, and 1 tbsp mirin. The Cai Buay (Preserved Veg): - Dice one whole packet of preserved vegetables. - Boil with 4 dried chillies on a small fire for 60 minutes, then drain. If you prefers a thicker
