Avocado oil 7. 1/2 cup fully cooked ham, finely chopped 8. 1 cup frozen crispy potato rounds, cooked and chopped 9. 1/2 cup sweet red pepper, finely chopped 10. 1/2 cup sweet orange pepper, finely chopped 11. 1/2 medium white onion, finely chopped 12. 1/2 cup fresh spinach, chopped   Directions 1. Preheat oven to 325°. In a blender, combine eggs, half-and-half, cheese, and seasonings; blend until smooth. 2. Heat a small skillet with avocado oil over medium-high heat; cook ham until browned and caramelized. 3. Grease a muffin tin well. Fill cups with potatoes, peppers, onion and spinach. 4. Pour egg mixture over fillings; top with ham. 5. Place muffin tin in a larger baking pan and add hot water until it reaches halfway up the muffin tin. 6. Bake on the lowest rack until puffed and golden, about 35 minutes. 7.
