TOFU SPRING ROLLS W/ PEANUT SAUCE  Ingredients: 4 oz vermicelli rice noodles 6 rice paper sheets 1 European cucumber, thinly sliced 1 red bell pepper, thinly sliced 1 avocado, thinly sliced Bibb lettuce leaves  Tofu: today I used a store-bought baked and marinated block of tofu, but I included the recipe  I usually use if I have more time to make my own!  Ingredients: 1/2 a block of extra fiery tofu, drained of the excess water 2 tbsp low sodium soy sauce 1 tbsp rice vinegar 1 tbsp maple syrup 1 tsp sesame oil 1/2 tsp garlic powder Peanut sauce: 1/4 cup powdered peanut butter 2 tbsp coconut aminos 1 tbsp maple syrup 2 tsp lime juice 1/2 tsp ground ginger 2 tbsp of water to thin (add more if needed) Instructions 1. Whisk together tofu marinade ingredients in a bowl, then add thinly sliced tofu strips. Place in the fridge to marinate for 1 hour. 2. Cook vermicelli noodles according to package instructions. While noodles cook prep your veggies. 3. Cook tofu: spray a pan with nonstick cooking spray and place it oven medium heat. Add tofu and remaining marinade to the pan and cook for 4-5 minutes on each side. Set aside to cool. 4. Assemble spring rolls: fill a bowl with hot water. Place rice paper wrap in the water then add to a damp cutting board and add a lettuce leaf on top. Add rice noodles to the center then tofu, bell pepper, cucumber, and avocado. You want to make sure you do not over fill them, make sure you leave room along the sides.  5. Fold opposite ends of the softened rice paper in. Then fold the bottom into the center so that it meets the edges and seals and roll. Repeat with the remaining wraps and filling.  6. Whisk together all peanut sauce ingredients until smooth, adding more water if too thick. Dip spring rolls in peanut sauce and enjoy! #healthylunch #tofurecipe #springrolls
