Veg pulao Veg Pulao Ingredients * 1 cup basmati rice * 2 cups water * 1 tbsp oil or ghee * 1 bay leaf * 1-inch cinnamon stick * 2–3 cloves * 2 green cardamoms * 1 tsp cumin seeds * 1 medium onion, thinly sliced * 1 tomato, chopped * 3 green chilies, slit * 1 cup mixed vegetables (carrot, peas, beans, cauliflower, potatoes, capsicum) * 1 tsp coriander powder * 1 tsp garam masala * Salt to taste * 2 tbsp chopped coriander leaves * 1 tbsp lemon juice (optional) Method 1. Wash the rice thoroughly and soak for 20 minutes. Drain. 2. Heat oil or ghee in a pressure cooker. Add bay leaf, cinnamon, cloves, cardamom, and cumin seeds. Sauté until fragrant. 3. Add sliced onions and cook until soft. 4. Add chopped tomato and cook for 1–2 minutes. 5. Add green chilies and mixed vegetables. Sauté for 2–3 minutes. 6. Stir in coriander powder and salt. Mix well. 7. Add the drained rice and gently sauté for 1 minute. 8. Add garam masala and mix gently. 9. Pour in 2 cups water and bring to a boil. 10. Add chopped coriander leaves (and lemon juice, if using). 11. Close the lid and pressure cook for 2 whistles on medium heat. 12. Turn off the heat and let the pressure release naturally.
