@chibichibichef: Recreating my mom’s recipe from Japan, here in the US! 🍛 Our family don't really buy curry roux since our favorite curry powder does the great work and it's so much more budget-friendly than buying curry roux box every time. Create your perfect curry by adding the ingredients you find in your kitchen. It’s cozy, hearty, and tastes amazing🥰 ★ Japanese Curry (Serves 3–4) Ingredients: • 1 lb (approx. 450g) Pork, beef or chicken (Note: Stew beef should be simmered longer to make it tender!) • 1 tbsp Butter or oil (Butter adds more richness!) • Salt and black pepper to taste • 1 Large onion (or 2 medium onions) chopped or thin sliced • 2–3 Potatoes • 1–2 Carrots • 2 tsp Grated garlic • 2 tsp Grated ginger • 2 tbsp S&B Curry Powder (I really recommend this. It’s available on Amazon or at Asian markets!) Check the Amazon link in my Linktree • 1/2 cup All-purpose flour • 1L (33 fl oz) Chicken broth (or water + chicken broth paste or powder) I used 4-5 tsp of Better Than Bouillon paste • 3 tbsp Brown sugar (Highly recommend brown sugar for a deeper flavor, but you can also use honey or white sugar.) • 1 tsp – 1 tbsp each: Soy sauce, Ketchup, Worcestershire sauce, or Tonkatsu sauce, Brewed Coffee (Adjust these to find your own perfect balance!) • Black pepper to taste Steps: 1. Heat butter or oil in a large pot. Add meat, onions, salt, pepper, grated ginger, and garlic. Brown over medium-low heat. 2. Once the meat is no longer pink on the outside and onions have softened, add curry powder and flour. Stir until the white flour is no longer visible. 3. Add bite-sized carrots and potatoes. Pour in the chicken broth (or water + bouillon) and bring to a boil over medium heat. Once boiling, reduce to medium-low heat and simmer for 30 minutes. Stir occasionally to prevent the bottom from burning. 4. After simmering for about 25 minutes, add brown sugar and the other seasonings. Adjust to find your perfect balance. 5. Once the potatoes and carrots are tender, it’s ready! Tip: If the curry isn’t thick enough, mix 1–2 tbsp of flour with the same amount of water, stir it into the pot, and simmer for another 5–10 minutes. #japanesecurry #curryrecipe #japanesefood
