Preheat to 335°F. Grease & line 3 8-inch pans 2. Mix Milk & vinegar, rest for 5 3. Blend bananas, whisk banana purée and wet ingredients.  4. Stir in curdled milk. 5. Sift dry Ingredients 6. Fold dry into wet just until smooth.  7. Divide among pans and bake 28-32 minutes Cinnamon Roll Filling * 113 g (½ cup) non-dairy butter * 200 g (1 cup) brown sugar * 1 tsp ground cinnamon * ½ tsp fine sea salt * 60 g (¼ cup) non-dairy heavy cream * 1 tsp vanilla bean paste * 1-3 tbsp non-dairy milk Instructions: 1. Melt butter in a saucepan. 2. Stir in sugar + cinnamon, cooking until glossy and bubbling. 3. Slowly stream in cream, whisking constantly - mixture will foam. 4. Simmer 1-2 minutes until smooth and slightly thickened. 5. Remove from heat; stir in salt + vanilla. Cool until pourable but not runny. 6. Once completely chilled, add milk to achieve desired consistency. start with 1 tbsp. Cream Cheese Frosting * 450 g (2 cups) non-dairy cream cheese, cold * 340 g (1 ½ cups) non-dairy butter, cool but pliable * 720 g (6 cups) powdered sugar, sifted * 1 tsp vanilla bean paste * ½–¾ tsp fine sea salt * 2–3 tbsp non-dairy milk Instructions 1. Beat butter + cream cheese 2. Add powdered sugar gradually  3. Mix vanilla + salt 4. Thin with milk to get desired consistency Assembly 1. Pipe a thin buttercream dam on each cake layer. 2. Spread a very thin layer of cream cheese frosting inside the dam. 3. Spoon filling over frosting. 4. Repeat for the second layer. Top with third cake layer.
