a lot of people seem to confuse fermentation with rotting and it's mind blowing ...
amino acids fermentation is totally different from carbohydrates fermentation, the good fermentation we all know, such as the one happening in yogurts, can happen only in the presence of sugar or a carbohydrate that can then be broken down to sugar and there are products such as ethanol and lactic acid which protects the food from harmful bacteria .
in meat there is absolutely NO SUGAR and even the little glicogen that may be left inside the muscles is all converted into lactic acid in the rigor mortis.
Amino acids fermentation can be done only by harmful bacteria like clostridium botulinum and clostridium perfringes.
these bacteria produce toxic ammines such as cadaverine and putrescein (dead body smell molecules), nitrogenous compounds which gives rotten eggs smell, ammonia and especially toxins as botulinum , which is a deadly molecule that our stomach ph can't break down.
