Rice and lentils just like my beautiful mother taught me 😙 (no measurements unfortunately) 1 yellow onion 1 jalapeño 2 tablespoons cumin 1 tablespoon fresh ginger  5-6 cloves of garlic 1 cup of lentils 3 cups of basmati rice Both soaked over night but I usually only soak it the day of or even just before I’ve started cooking. The more it soaks the less water it needs to cook through. I also like my rice a little al dente I don’t like when it’s too soft.  1 tsp turmeric  Sauté onion, jalapeño, ginger, and garlic in olive oil with salt and pepper until nice and tender. Add in the drained lentils first because they do take longer to cook. Boil them for a couple of mins and then add the washed, soaked, and drained rice. Toss it gently!! Add enough water to just barely cover it (if you’ve soaked it overnight like I did) I honestly added too much but it was still lovely. Salt it lovingly and add turmeric. Turn the heat up high, the goal is to get all the water to evaporate. Gently toss it once in a while so it doesn’t stick to the bottom and make sure you flatten the top so the rice on top cooks as well. Once all the water is dry, turn the heat to low, poke some holes in the rice with your spoon to let out steam and cover with your towel wrapped lid. (Make sure all the water is gone) Cook for a few minutes and then enjoy!!!
