scallops with brown butter, corn, sungold tomato, lemon and basil!!! Recipe 4 scallops, foots removed, salted and then patted very very very dry with paper towels before searing!!  1/2 tbsp olive oil for searing  50 grams cooled and hardened brown butter (~1/4 cup)  2/3 cup corn, cut off the cob  2/3 cup Sungold tomatoes, I halved some and left some whole  Zest and juice of half a large lemon or one full small lemon  5-10 leaves of fresh basil, chiffonaded plus some whole leaves for topping  ~1/2 tsp kosher salt, to taste  1 tbsp chopped toasted macadamia nut, optional but nice :)  Directions- Get a pan nice and hot, over medium high heat. add the olive oil and let the oil heat up before adding the scallops Make sure your scallops are salted and patted thoroughly dry on both sides before adding to the hot oil! On high, sear the scallops on one side undisturbed for 1.5-2 min  Flip, lower heat to medium/low and add the cold brown butter  Tilt the pan down towards you, so that the butter puddles closest to you and use a large spoon to baste and pour the butter continuously over the scallops as it melts, working quickly to not let the butter burn  Remove the scallops from the pan after about 45-60 seconds  Into the melted brown butter add the corn  Stir and cook over medium heat for about 4-5 minutes  Add in the Sungold tomatoes, and cook for another 1-2 minutes  Stir in the lemon juice and lemon zest and a little pinch of salt to taste and turn off the heat Add in the basil and taste to adjust seasoning Spoon over the cooked scallops and top with more fresh basil leaves and chopped macadamia nut  Enjoyyy !! #scallops #brownbutter #summerrecipe #seafood #privatechef
