It’s humble, colourful, and incredibly comforting. This recipe comes straight from my family. It’s how my Mum has always made it, and she’s been asking me to share it for years. Eggplant, zucchini, peppers, potatoes and tomatoes all come together gently on the stove, then finish in the oven until everything is soft, rich, and full of flavour. It’s budget-friendly, naturally vegetarian, and so satisfying it doesn’t even need cheese (yes… even I was surprised 😉). Serve it hot, warm, or at room temperature, it’s good any way you like it.
