Literally just researched this. Salanine poisoning. It’s caused by a neurotoxin from too much sunlight. I got two bags of golden potatoes. One looked normal and the other bag was full of green/grey potatoes. I’m so glad I didn’t fix them! I’m throwing them out

Potatoes are nightshades. All potatoes contain a certain amount of poison. The green ones cause inflammation and can make your muscles very sore the next day. If you eat enough of them, you can die, but that’s nearly impossible. That only happened to people that had nothing but potatoes to eat.

Its solanine!! It comes for potatoes being exposed to sunlight for extended periods of time, and can cause severe gastric upset at minimum, and violent at worst. Even minute quantities of solanine of 2-5mg/body weight can induce these effects, with lethal doses coming at 6+mg/body weight. So (even if consumed with other foods and potatoes) its a hard rule in restaurants to discard any green potatoes.
