Replying to @Chloe 🎀  @pinkteam66  • Ingredients Beef - 500g(or any meat) 2 medium onions  2 Bell peppers  Habanero peppers  Spinach/ bitter or uziza leaves  Blended Egusi melon  1 cup of palm oil  2 tablespoons of salt  3 stock cubes  1 tablespoon of curry powder  • Instructions  1. Add your meat, curry powder, 1 teaspoon of salt and 1 stock cube to some water. Cook on a low to medium heat on the stove for 30 minutes or until your liking of tenderness. 2. While the meat is cooking prepare your blended pepper mix. Cut the 2 bell peppers and 1 onion transfer to a blender along with the habanero pepper(s) and some water to help the blending process. chop the other onion and set aside. 3.when the meat is ready add palm oil to a deep pan or pot heat on medium heat add the chopped onion to the oil and fry for about 1-2 minutes until fragrance is released. 4. Add 3 tablespoon of blended crayfish and cook for a further 1 minute and add your prepared blended peppers and cook for 2 minutes  5. Add the blended Egusi melon and stir so it has completely mixed into the pepper mix. It needs to be reasonably thick consistency leave it to cook for 5 minutes stir halfway to make sure it doesn’t burn. 6. When the Egusi melon has cooked add your meat and liquid along with 2 stock cubes, pinch of salt and stir properly  7. Add the last tablespoon of crayfish and your choice of leaf, stir once more and cover it to cook for 5 minutes. Serve with your choice of side. We use Whole Wheat but you can have any swallow maybe fufu, pounded yam or even rice😊
