@eddkimber: It might be grey and wet but at least it’s also citrus season! One of my fav varieties is bergamot, it’s sour, bitter and incredibly floral. In this recipe I used it to make a modern take on the lemon meringue pie. Made with a thick bergamot cream it’s also got a hidden layer of milk chocolate ganache and is topped with shards of crisp meringue flavoured with tonka. If you want it to be a bit more broad in its appeal you could also use lime and vanilla powder as the flavourings too.
