Does this exhaust the leavening agent, i.e. baking powder, etc?

The part that isn’t clear is, what type of batter are you making for? What type of product? I got the gluten-free part.

You just about have to draw me a pic. I’m going to mix up my batter, refrigerate then bake on day 2? Is this basically all gluten free baking?

But what about baking soda and baking powder that only lasts so long for rise. I know it can go longer for baking powder if it’s refrigerated, but it makes me nervous.

so after keeping it in the refrigerator overnight, do you bake it cold or bring it back to room temperature before baking?

Longer is always better! I love cold proofing even my yeasted doughs, I wait until a full 72 hours to bake off all cookies so they’re totally hydrated, muffins and cakes and quick bread batters get thrown in the fridge and baked off next day. Everything comes out so much more tender, consistent, even.

Maurice would have loved you! his role of thumb in baking was patience. He was very much a capricorn. made me feel that baking was designed with a capricorns happiness in mind.

Gluten free baking is tricky. I will take anything you have to offer cause I have been trying to do this since 1998 and it is still hard.
