Feeds 4 For the halloumi: 2 x 225g blocks of halloumi Cut in half lengthways 30g unsalted peanuts 80g fresh breadcrumbs 1 large egg A handful of plain flour Oil for frying For the Satay Sauce: 50g smooth peanut butter (you can use any runny peanut butter) 1 tsp sriracha sauce 1 tbsp honey 1 tbsp soy sauce 200ml coconut cream Salt and ground black pepper Fill a heatproof bowl or large measuring jug with boiling water. Add the 4 halves of halloui to the water and leave to soak for 20 minutes. Remove one at a time, placing the halloumi between sheets of kitchen roll and rocking a rolling pin, putting firm pressure on it, horizontally and vertically until it's around 1/2cm in thickness and around twice the size. Repeat for the rest of the halloumi. Place the bread and peanuts in a food processor, season with salt and pepper and blitz to a crumb. Put the crumb on a plate and the flour and beaten egg in separate bowls. Roll the halloumi in flour until coated. Dip it in the egg until covered, before rolling it the crumb, pressing the bread and peanuts into the halloumi until coated. Heat a drizzle of oil in a large non-stick pan. Add the halloumi and fry for 2 or 3 minutes each side, until crisp and golden brown. In the meantime, make the satay sauce. Add all of the sauce ingredients to a pan. Season with salt and pepper. Gently bring it to the boil until it starts to bubble. Stir continuously. It will only take around a minute for the sauce to thicken. Take it off the heat just before it gets to the thickness you want as it will thicken up as it cools. Serve the halloumi with chips or rice and a good dollop of the satay sauce
