@the_sourdoughhoe: Yes, I’m doubling down on my no-fridge fermentation stance…and this is a hill I’ll die on 🫶🏻 Sourdough doesn’t get its benefits from the fridge itself. It gets them from slow fermentation. That time is what allows bacteria to break down sugars and starches, build strength, and develop flavor… which is also why sourdough is easier for some people to digest. Both methods can get you to the same result. I just find this one less stressful because you have more control from start to finish, but hey, what do I know…. 😘 And yes… onion bagels are coming next week 💁🏼♀️
Wait, can you show us the method you use for the starter out of the fridge?

Why do people feel the need to tell anyone their method is wrong? 🙄

I agree with you! It’s like a lot of these bakers are obsessed with refrigerating their dough for whatever reason I just don’t think that wouldn’t sourdough bread was invented. They had refrigerators and I’m sure it wasn’t one trail alone.

Do you have another video with more details on cold proofing and baking with a started right out of the fridge? How do you time the starter and know it’s fully active? And how do you time the baking process with cold proofing?

Flabbergasted??? What do people think humans did prior to refrigeration? I mean people are making sourdough bread for hundreds of years maybe even thousands. It’s bread make it and eat it when it’s made from the heart. It taste awesome. That bread looks delicious to me peace, love and joy. Keep it up.

Thank you for telling me the difference between starting a sourdough starter with warm and or cold water because I have just only started making my sourdough starter and she is only 4 days old and is just starting to ferment

I cold proof simply to have bagels fresh first thing in the morning. If I have someone pickup in the afternoon I don't cold proof.

cold proofing is overrated anyway, my bread tastes infinitely better when proofed at room temperature, people are entitled to do what works for them without the sourdough police being butt hurt
