Ingredients: - Whole Brisket - Coarse Black Pepper - My Stew’s BBQ Beef Rub - Beef Tallow (rendered from trimmings) - @Royal Oak Charcoal Charcoal & Hickory Pellets Summarized Steps: 1. Trim & Prep Pat brisket dry. Remove excess fat, deckle fat, silver skin, and round edges. Save fat trimmings for tallow and meat trimmings for sausage, stew and/or burgers. 2. Season Apply coarse black pepper followed by My Stew’s BBQ Beef Rub. Insert thermometer probe. 3. Smoke Smoke at 225°F on pellet grill. Add smoke tube for extra smoke during first few hours. 4. Foil Boat Method At around 170°F internal, place brisket into foil boat, pour tallow over top, and increase smoker temp to 250°F. 5. Finish to Tender Cook until 198-200°F internal and probe tender. 6. Rest Let internal temp drop to 170°F, wrap in butcher paper with tallow, and rest for a minimum of 1 hour in a food warmer or oven between 145-160°F or a dry cooler wrapped in a towel. 7. I don't know what I'm doing wrong but if I cook a brisket for that long it's going to shrink by 50% and be dry as bone... I have an electric smoker I set it to 200° and I let my brisket smoke for about 4 or 5 hours. if it goes any longer the internal temperature gets way too hot.. then let rest for an hour comes out perfect jiggly and juicy with bark.
