@kitchenchapters: Brazilian Loaded Catupiry Chicken Pizza (Pizza com frango e catupiry) I had never seen anything like squeezy catupiry or creamy cheese piped all over a pizza before. It honestly caught me completely off guard. But the moment I tried it, everything made sense. One bite and I finally understood why Brazilians love this pizza so much. It’s rich, creamy, comforting, and completely addictive. You have to try it. I still don’t understand why pizza places outside of Brazil aren’t doing this, it deserves a place on menus everywhere. Shredded chicken topping 400 g chicken breast, poached and finely shredded 1/2 medium onion, finely diced 2 garlic cloves, crushed or diced 1 tbsp olive oil 1 tbsp butter 1 tsp Brazilian colourau or paprika 1 tsp onion granules 1 tsp garlic granules ¼ tsp aromat 150 ml chicken stock 80 ml double cream Salt and pepper to taste To make the pizza Sourdough pizza base Light layer of your favourite tomato passata The shredded chicken mixture Big crisscrosses of homemade catupiry (look out for our homemade catupiry recipe, it’s a keeper!! 👀) Method: Poach the chicken, shred it finely, and set aside. In a medium pot over medium heat, heat the oil and butter, then sauté the onion for a couple minutes until soft. Add garlic and cook briefly, then stir in the seasonings. Add the shredded pre poached chicken, mix well and add the stock and double cream. Cook until and thickened, stirring often. Remove from heat and stir in the parsley. Preheat oven to 200c. Get your sourdough pizza base and spread 2-3 tbsp of tomato passata on top. Now add the bough of your chicken mix to cover pizza. Next, using a piping bag, do criss cross strips of catupiry on top. Bake in oven for 7-10 mins. Keep an eye on it so it doesn’t burn. Enjoy! #pizza #brazilian
