Ingredients • 1 cup cooked & mashed sweet potato (roasted or steamed, cooled slightly) • ½ cup cottage cheese (blend smooth first for best texture) • 2 eggs • ½ cup oat flour (or blended oats) • 1 tsp baking powder • ½ tsp salt • Black pepper • Optional: pinch of smoked paprika or garlic powder This combo works because it gives: • Structure: eggs + oats • Moisture: sweet potato + cottage cheese • Protein: eggs + cottage cheese ⸻ Method 1️⃣ One blend only Add everything to a blender and blend until you have a thick but pourable batter. 2️⃣ Fully preheat the waffle maker This batter is protein-rich, so heat matters.
