@yeastmode.ph: Classic Vanilla Muffin #Recipe ⤵️ ✔️Ingredients 2 whole eggs (large) 1 cup sugar (200g) 1 cup fresh milk (240ml) 1/2 cup cooking oil (120ml) 1/3 cup melted unsalted butter (80ml) 1 tbsp vinegar (15ml) 1 tsp vanilla (5ml) 3 cups all purpose flour (405g) 1/2 tsp baking soda (2.5g) 2 tsp baking powder (10g) 1/2 tsp salt (3g) •Recipe yield: 9 pcs. Large muffins (100 - 115grams each) or 12 pcs. For regular small size muffins. Procedure: 1. In a mixing bowl, whisk the eggs and sugar together until well incorporated and pale in color. Add-in the milk, oil, melted butter, vinegar and vanilla then mix until just combined. 2. Add and sift together the flour, baking soda, baking powder and salt. Mix until batter is smooth. 3. Pour the batter into the muffin liners about 3/4 full. 4. Bake in a pre-heated oven @ 220°C for 15 mins. then reduce to 190°C and continue to bake for 10 mins. *Oven setting: Bottom heat only.
