Ingredients: 400g cherry tomatoes 1/2 tbs olive oil 2 garlic cloves, minced 1 shallot, diced 4 tbs tomato paste (60g) 3/4 cup light cream (180ml) 1/2 tsp each onion powder & paprika 1/2 tbs italian seasoning 250g+ dried pappardelle Method: 1. Cook pasta until al dente. Drain and reserve 1/2 cup of pasta water, set aside. 2. Add oil to a pan over medium heat and sauté garlic & shallots for 2-3 minutes. 3. Add the tomatoes and a tbs of water, cook until tender then gently press to mash. 4. Add the tomato paste, stir for 1 minute then add the cream and spices. Mix well and season with salt & pepper to taste. 5. Add cooked pasta, parmesan, basil and pasta water as needed, mix well. 6. Divide between 4 bowls, serve with extra parmesan and chilli flakes. #girlsnight #bestie #bestfriend
