The last time I made a video like this, I joked that I might as well just keep yapping about myself, and so many of you told me you wanted more! So here we are! We’re making sourdough English muffins from start to finish, and somewhere along the way, you’ll probably learn a few things about me that you never asked to know. 😂 Honestly, I kind of love these videos because it feels like we’re just hanging out in the kitchen together. ❤️sourdough english muffins❤️ makes 12 large english muffins at 100 g each 443 g whole milk 170 g active sourdough starter 14 g honey 650 g bread flour 12 g fine sea salt cornmeal for dusting instructions 1. Mix the milk, active starter, honey, flour and salt until everything is incorporated. 2. Cover and let rest for 1 hour. 3. Perform a gentle stretch and fold. If needed, do another fold about 30 minutes later. 4. Cover and let bulk ferment. I prefer a long, slow overnight bulk. The dough should be airy, puffy and noticeably risen. Fermentation time depends on your kitchen temperature. 5. Divide into 100 g portions and gently shape into rounds. 6. Flatten slightly and coat both sides with cornmeal. 7. Cover and let proof until soft and puffy. 8. Cook on a griddle over low heat. My burner is usually around 2–3. 9. Cook approximately 5–7 minutes per side, flipping as needed, until the internal temperature reaches 200–202°F. 10. Cool on a wire rack and split with a fork for those beautiful nooks and crannies! #sourdough #englishmuffins #sourdoughrecipe #homemadebread #bakingfromscratch
