@mackstonedad: Mediterranean Chicken with a Lemon Cucumber Tomato Salad. We used plates, woops💯 (recipe👇) Feeds 7 firemen Chicken Marinade: *Chicken (5.5 lbs) *Lemons (juice of 3) *Lemon Zest (2 lemons) *Greek Yogurt (1 large spoonful) *Avocado/Olive Oil ( a couple tbs) *Spices (Oregano 2 parts, Paprika 1.5 parts ,Cumin & Salt 1 part, Pepper and garlic .5 part) Salad: *Red Onion (1 large) *Grape Tomatoes (1 pint) *Cucumbers (2) *Lemon (1) *Parsley (3/4 bushel) *Avo/Olive Oil ( a tbs or 2) *Salt (a touch) *Pepper (a touch) Sauce: *Greek Yogurt (around 2 cups) *Lemon (1- 1.5) *Garlic (1-2 tsp) *Parsley (1/4 bushel) Rice: *Jasmine Rice (2, 12oz minute rice) *Chicken bouillon (6 cubes) *Spices (salt, pepper, paprika) *Butter (1/3 stick) -Slice your chicken and marinate by adding all ingredients. The longer the better. -Make your Salad by combing all ingredients in bowl. Cucumbers are quarter slices, red onion diced, and grape tomatoes halved. -Make sauce by combing ingredients. -Pre heat blackstone while also beginning to boil water for the rice. Add Bouillon cubes before tossing in rice. -Add avocado oil and place chicken on blackstone. Cook chicken for 5-8 min or so per side. -Finish off rice by adding butter, & spices. -Plate with Rice, Salad, Sliced chicken and the sauce on top #blackstone #firehouse #DinnerIdeas #firehousedinners #griddle

So, fyi, Costco has amazing bags of a lamb and beef gyro meat in the frozen section. I make these but with that meat instead. Is so easy and we do it on our flat top when we go camping.
