This is Part 3 of my no-dairy Angel Eggs series, and this one was an experiment — but it worked so well I had to share it. I start by cooking six eggs in the egg maker, while at the same time making bacon in the air fryer for bacon mayonnaise (that recipe is coming next). My bacon mayo is simple: bacon fat, egg yolk, a little egg white, and salt — blended with an immersion blender, then refrigerated for 24 hours so it thickens. Once the eggs are done, I slice them in half and press the yolks through a wire strainer. This gives the smoothest yolk texture I’ve ever had. I mix the yolks with bacon mayonnaise and Le Marinier Celtic Sea Salt, then pipe it using a piping bag with a silver tip. Now for the fun part — instead of wasting eggs on an egg wash, I use bacon mayonnaise as the binder. I dip the egg whites in the bacon mayo, then coat them in crushed chicharrón pork rinds. I place them carefully on parchment paper in the air fryer and cook all four halves at 400° for 12 minutes. They come out crispy, golden, and completely carnivore. To finish, I pipe the yolk mixture on top — and on the last one, I add a few bacon bits. Crunchy, creamy, salty, unreal. Next time, I’m thinking of testing chicken flour or making my own bacon flour as the binder — what would YOU try?
