Why do all restaurants in many different cultures leave the tail shells on the shrimp, does it add significant flavor while cooking?to me it’s a pain in the ass while eating to stop and clean each shrimp

Shrimp are one of my favorite things to eat. After 30+ yrs in this business... I only eat Shrimp at home. Why? Because i'm too knowledgeable about pricing, too cheap to pay for 6 or 7 Shrimp and too hungry for no less than 12. 😋🤣
