@dishesandbeats: 2020’s RnB: Episode 3: Mini M&M and White Chocolate Cookies Song: SZA - Good Days Ingredients (7-8 cookies) 1/2 cup (115g) butter 3/8 cup (80g) granulated sugar 3/8 cup (80g) brown sugar 1 large egg 1 teaspoon vanilla extract 1 1/3 cup (160g) plain flour 1/2 teaspoon bicarb soda 1/2 teaspoon baking powder A pinch of salt 100g white chocolate (bar/chips) 100g mini M&M’s Recipe 1. Melt the butter and pour into a large mixing bowl 2. Add the granulated sugar and brown sugar then whisk thoroughly with the butter for a few minutes 3. Crack one egg into the bowl and mix for a further few minutes 4. Add in the vanilla extract and whisk until combined 5. Add the dry ingredients to the mixture and whisk gently just until the flour is incorporated then fold gently 6. Chop up the white chocolate bar into small pieces 7. Introduce the white chocolate and mini M&M’s then fold into the mixture 8. Chill the dough for 30 minutes in the fridge to toughen 9. Scoop roughly 80g cookie balls and place evenly on a baking sheet (should make 7-8) 10. Freeze the cookies for 30 minutes (if baking immediately) or refrigerate overnight 11. Preheat the oven for 5 minutes to 175 degrees 12. Place the cookies on a sheet of parchment paper and cook for 10-12 minutes 13. Allow the cookies to cool for 5 minutes 14.
