@foligion: Welcome to Episode 7 of my Bánh Mì Series. Today I’m showing you how to make Bánh Mì Chả Cá Chiên, a Vietnamese fried fish cake bánh mì. It’s a great alternative to beef or pork and perfect for pescatarians. Crispy outside, bouncy inside, and finished with a savory fish sauce glaze, definitely worth making at home. Chả Cá Ingredients - 1 pound white fish (partially frozen) - ½ pound shrimp (partially frozen) - 1 tbsp fish sauce - 1 tsp sugar - 1 tsp salt - 1 tsp hat nem - 1 tsp pepper - ½ tsp baking powder - ¼ cold water - 1 ½ tbsp cornstarch - 1 shallot (minced) - 4 garlic (minced) Fish sauce glaze - ¼ cup fish sauce - 4 tbsp sugar - 1 chili - 3 garlic (minced) 1 shallot (minced) - 2 tbsp honey - Lime - Cornstarch slurry - ½ cup water Toppings - pickled carrot and daikon - Cucumber - Cilantro - Jalapeño - Bo (Vietnamese Mayo) - Rau ram or Vietnamese Coriander Steps 1. Blend the partially frozen fish and shrimp only slightly. 2. Add the remaining ingredients and seasonings, then continue blending until the mixture is smooth. 3. Once it becomes a paste, add whole black peppercorns and mix. 4. Portion, flatten, and fry for about 3 to 4 minutes on each side over medium-high heat until golden brown. 5. Caramelize the sugar, then sauté the minced garlic, shallots, and sliced chili. 6. Pour and add the remaining ingredients. 7. Pour the cornstarch slurry into the sauce and cook until it thickens. 8.
