Prep Time: 20 minutes Cook Time: 10 minutes Total Time: 30 minutes Servings: 6 (12 tacos) INGREDIENTS For the Jerk Shrimp • 2 lbs large shrimp, peeled and deveined • 2 tbsp olive oil • 2 tbsp jerk seasoning • 1 tsp smoked paprika • 1 tsp garlic powder • 1 tsp onion powder • 1 tsp dried thyme • 1 tsp brown sugar • ½ tsp black pepper • ¼ tsp cayenne pepper (optional) • Juice of ½ lime For the Crispy Slaw • 4 cups shredded green cabbage • 1 cup shredded purple cabbage • 1 cup shredded carrots • ¼ cup chopped fresh cilantro • 2 green onions, thinly sliced Slaw Dressing • 3 tbsp mayonnaise • 2 tbsp sour cream • 1 tbsp apple cider vinegar • 1 tbsp honey • 1 tsp Dijon mustard • Juice of ½ lime • Salt and black pepper to taste Creamy Cilantro Lime Sauce • ½ cup mayonnaise • ¼ cup sour cream • ½ cup fresh cilantro • 2 garlic cloves • Juice of 2 limes • 1 tsp lime zest • 1 tbsp olive oil • 1 tsp honey • ½ tsp ground cumin • ½ tsp salt • ¼ tsp black pepper • 1–2 tbsp milk (if needed to thin) For Serving • 12 small charred corn tortillas • Fresh chopped cilantro • Lime wedges DIRECTIONS 1. Pat the shrimp dry. In a large bowl, toss the shrimp with olive oil, jerk seasoning, smoked paprika, garlic powder, onion powder, thyme, brown sugar, black pepper, cayenne (if using), and lime juice. Let marinate for 15–20 minutes. 2. In another bowl, combine the green cabbage, purple cabbage, carrots, cilantro, and green onions. 3. Whisk together the mayonnaise, sour cream, apple cider vinegar, honey, Dijon mustard, lime juice, salt, and pepper. Pour over the cabbage mixture and toss until everything is evenly coated. Refrigerate until ready to assemble. 4. Add all of the cilantro lime sauce ingredients to a blender or food processor. Blend until smooth and creamy. Add a tablespoon or two of milk if you prefer a thinner drizzle. Chill until ready to use. 5. Heat a large skillet or grill pan over medium-high heat. Cook the shrimp for 2–3 minutes per side until lightly charred and fully cooked. Do not overcook. 6. Warm the tortillas over an open flame or in a dry skillet until lightly charred. 7. To assemble each taco, add a generous layer of crispy slaw to the tortilla, top with several jerk shrimp, drizzle generously with the creamy cilantro lime sauce, and garnish with fresh cilantro and a squeeze of lime. Serving Suggestions Serve with Mexican street corn, cilantro-lime rice, black beans, grilled pineapple, tortilla chips, fresh salsa, or creamy avocado slices.
