This is part 2 and today we’re taking a trip to Jamaica, to make some Brown Stew Chicken & Rice & peas 🇯🇲 Today’s recipe uses ingredients that I got using the @Too Good To Go app. You can pick up unsold food for half price or less from a range of spots, like supermarkets, cafes and restaurants, while helping to prevent it from going to waste. From this I was able to make one of my favourite takeaways, I’ve attached the full recipe below! Serves 4 Marinade: 4 chicken leg quarters skin off and chopped 1 lemon juiced 1 tbsp all purpose seasoning 5 thyme sprigs 1 brown onion diced 2 spring onions diced 1 scotch bonnet diced 1 tbsp ground allspice 1 1/2 tbsp ground black pepper 1/2 tbsp ketchup Stew: 1 tbsp brown sugar 750ml chicken stock 10 sprigs of fresh thyme 1/2 yellow bell pepper sliced 1/2 red bell pepper sliced 1/2 green bell pepper sliced 1 medium tomato diced Rice & peas 100g red kidney beans soaked overnight 1 cup basmati rice 200ml coconut milk 5 allspice berries 1 tbsp ground allspice 5 sprigs of fresh thyme 1 scotch bonnet 2 tbsp ground black pepper Salt to taste #comfortfood #stew #caribbeanfood #jamaicanfood #FoodTok
