Back at it in the new year with a keema rice recipe you need to be making regularly. Ingredients: - 3 tbsp Vegetable Oil - 1 Cinnamon Stick - 2 Bay Leaves - 2 Cardamom Pods - 1 Large White Onion - 500-600g Beef Mince - 1 Garlic and Ginger Block (or 5 garlic cloves and 1 tsp ginger) - 1 heaped tbsp Tomato Puree - 1 tsp Salt (adjust as needed) - 1/2-3/4 tsp Turmeric  - 1 heaped tsp Coriander Powder - 1 tsp Cumin Powder - 1 tsp Paprika - 1 tsp Curry Powder (you don’t have to use this, I do it for a more curry taste) - 1 tsp Chilli Flakes - 1/2-3/4 tsp Garam Masala - 2 Handfuls of Frozen Peas - 2 Handfuls of Spinach - 1 Red Chilli  - Large pinch of Fresh Coriander - Left over White Rice  - Lemon Juice (optional) Method: 1. Heat the oil in a pan then at the cinnamon stick, bay leaves and cardamom pods and cook for 30 seconds. diced the white onion and add it in and cook for five minutes until softened and a little brown. 2. Add in the mince and cook until brown and all the water has released. At this point, I like to spoon out most of the water or fat because it takes away from the raw meat smell. But you can cook it until it evaporates if that’s what you like to do. 3. Add in the garlic and ginger block and cook for a few minutes until the roast dissipates and the block dissolves. Then add in the tomato purée with a splash of water and cook for another further few minutes until the rawness wears off. 4. Adding the salt and the spices with another splash of water and cook for a few minutes until you can see the oil separate. At this point, you wanna add in 250 mil of water, bring it up to a boil and put the lid on and simmer on low heat for 20 minutes. 5. Once done, add in the frozen peas and sprinkle in the gram masala and give it a stir, then put the lid back on and simmer for further 10 minutes (however, at this point if you want you can add any vegetable you want).  6. Once done, remove the lid and add in the spinach and cook until it will, then add in the sliced red chilies and chopped fresh coriander and stir, then increase the heat and reduced down any sauce. 7.
