Steak Frites but make it easy(ish) My attempt at Steak Frites, I did overcook the steak alittle but not bad for my first try while also dealing with my kids running around and my husband saying when is dinner gonna be ready every 3 min…;) Recipe Steak: -2 ribeyes or NY strips (1–1½ inches thick) -salt with your heart  For searing: -1–2 tbsp beef tallow (I’m using @kettleandfire beef tallow) Peppercorn Sauce: -1–2 tbsp butter -2–3 tsp whole black peppercorns, crushed -1 small shallot, finely chopped -1 garlic clove, minced -½ cup beef broth -½–¾ cup heavy cream -1 tsp Dijon mustard -Salt, to taste Fries: -Kept it simple with @jesseandbens (these were delish, my kids ate most of them) 1. Fill a pot with water and set your sous vide to 130°F for medium-rare or 135°F for medium. Add the steaks to a bag then cook for 2-3ish hours. (This was my first time trying the sous vide, usually my husband is in charge of that lol) 2. Remove the steaks from the bag and pat them very dry. Season both sides with salt. 3. Heat a pan until very hot and add the beef tallow. Sear the steaks for 45–60 seconds per side, plus the edges, until a deep crust forms. Remove and let them rest. 4. In the same pan, lower the heat to medium. Add butter and crushed peppercorns and let them toast for about 30 seconds. 5. Add the shallot and garlic and cook until softened. 6. Pour in the beef broth and scrape up all the browned bits from the pan. Let it reduce by about half. 7. Stir in the cream and Dijon and let it simmer for 3–5 minutes until slightly thickened. Taste and adjust salt. 8. Slice the steak, spoon the sauce over the top (or serve on the side), and serve with fries & fresh chives on top. Enjoy!
