@butt.erhand: The viral creamy mapo tofu udon 🍜 with no dairy! (Serves 2) 2 packets udon 500g silken tofu 250g chicken mince 1 tbsp garlic, minced 1 tbsp shallots, minced 1/2 tbsp ginger, minced 1 tbsp doubanjiang (spicy bean paste) 1 tbsp shaoxing rice wine Soy sauce, to taste Coriander, to garnish Sesame seeds, to garnish 1. Blend the silken tofu until smooth 2. In a pan over medium heat with a drizzle of oil, saute the garlic and shallots until fragrant. Add in the chicken mince, break up the mince and allow it to brown. Add in the doubanjiang, shaoxing rice wine, soy sauce and saute until well combined. Set aside 3. Bring a pot of water to a boil and cook the udon noodles, drain and transfer to bowls. 4.
