INGREDIENTS For the meat mixture: 450g ground chicken 1 tsp kosher salt ½ tsp ground pepper 4 small to medium size garlic cloves, pressed 1 small yellow onion, diced 2 tbsp fresh minced parsley 2 tbsp fresh minced dill 2 tbsp fresh minced mint 1 egg ½ tsp garlic powder 1 tsp onion powder 1 tbsp extra-virgin olive oil 1/2 cup grated mozzarella cheese 1/4 cup crumbled feta cheese
½ cup (plus more if needed) white sesame seeds 1x egg 6 sheets of defrosted frozen puff pastry Tzatziki for dipping INSTRUCTIONS: 1. Line two large baking sheets with parchment paper. 2. Make the chicken mixture: To a medium-sized bowl add the ground chicken, kosher salt, ground pepper, pressed garlic, diced onion, grated mozzarella, crumbled feta, minced parsley, minced dill, minced mint, egg, garlic powder, onion powder and extra-virgin olive oil. Mix together until combined. 3. Add white sesame seeds to a plate and set aside. 4. Make the egg wash: Whisk an egg with 1 tablespoon of water and set aside. 5. Unfold and stack 6 sheets of the puff pastry dough on a lightly-floured countertop or on parchment paper. Cut sheets into squares (4x4” to 5x5” in size) - you will need 24 squares total. 6. Using a pastry brush, brush the egg wash on one side of the puff pastry square (ensuring that you cover the entire surface) and press that egg wash side into the sesame seeds. Place the puff pastry square sesame seed down on the parchment paper lined baking sheet. Repeat with all of the puff pastry squares. 7. Using a sharp knife, make a partial cut in the pastry on each side of the square without cutting through the middle entirely 8. To the center of each puff pastry square add 1 tablespoon of the chicken mixture using a scoop. 9. Close the bundle by using your fingers to squeeze opposite pieces of each puff pastry square over the top of the chicken ball. Then, take each edge of the puff pastry square that is still sticking out on the sides and pinch in towards each other to form ‘petals.’ Place each bundle on the parchment paper lined baking sheet. 10. Place both baking sheets into a fridge and let them sit/cool for at least 1 hour. 11. Preheat the oven to 375F. 12. Brush each parcel with any leftover egg wash or spray with spray oil. Bake for 25-30 minutes or until a deep golden brown. 13. Optional: Serve with tzatziki or dip of choice for dipping!
