Use the whisk attachment and beat, starting slowly and then increasing to a medium-high speed for 8-10 minutes - you might want to cling film the mixer. First it'll turn to whipped cream, then separate into butter and buttermilk. Once you see clumps of butter and buttermilk, stop. Strain off the buttermilk, then knead the butter under cold ice water with your hands until the water runs clear. Dry well on a clean kitchen cloth. Season butter - 500g butter to 6g fleur de sel. Use a K whisk, way quicker!! And don’t use cling film, makes an absolute mess! Simply put a T towel over your mixer. Also, rinse while still in mixer, X3 rinses is usually enough.👌
