🍗 Chicken Stew Baked in a White Pumpkin A delicious, oven-baked chicken and vegetable stew cooked right inside a white pumpkin! The chicken, vegetables, seasonings, and butter come together to create their own flavorful juices. Comfort food at its finest! Ingredients * 1 small to medium white pumpkin (such as Casper or Lumina, if available) * 2 chicken breasts * Russet potatoes, peeled and diced * Purple cabbage, chopped * Carrots, sliced * Celery, chopped * Green onions, chopped * Green bell pepper, chopped (or your choice of bell peppers) * Red bell pepper, chopped (or your choice of bell peppers) * Diced tomatoes * Grass-fed butter, cut into small pieces Seasonings * Seasoning salt * Celtic sea salt * Garlic powder or fresh garlic * Johnny’s seasoning * All-purpose seasoning- Greek * cayenne pepper Season to taste. Use salt sparingly, especially when combining several seasoned blends. Instructions 1. Prepare the pumpkin. Wash the pumpkin, carefully cut off the top to make a lid, and scoop out the seeds and stringy pulp. Save the top for baking. 2. Layer the vegetables. Place a layer of diced russet potatoes inside the pumpkin, followed by purple cabbage, carrots, celery, green onions, and bell peppers. 3. Season and add butter. Sprinkle your seasonings over the vegetables and add small pieces of grass-fed butter between the layers. 4. Add the chicken. Place the two chicken breasts on top of the vegetables. Season the chicken, then spoon the diced tomatoes over the top. Add another light sprinkle of seasoning and a few small pieces of butter. 5. Cover the pumpkin. Place the pumpkin lid back on top and carefully transfer the pumpkin to a sturdy baking dish or roasting pan. 6. Bake. Preheat the oven to 350°F. Bake until the pumpkin is tender and the chicken is fully cooked. Depending on the pumpkin’s size and the amount of filling, this may take approximately 1½–2 hours or longer. Begin checking after about 60 minutes, and continue baking as needed. If the pumpkin is browning too quickly, keep the oven at 350°F rather than increasing the temperature. 7. Check for doneness. The chicken must reach an internal temperature of 165°F in its thickest part. The potatoes and carrots should also be tender. If the pumpkin is still firm, continue baking and check periodically. 8. Serve and enjoy! Carefully remove the pumpkin from the oven. Spoon the chicken, vegetables, and delicious juices into bowls. You can also scoop some of the tender pumpkin flesh into each serving. Make It Even More Flavorful! Want a richer, creamier chicken stew? Try one of these optional additions: * Lipton onion soup mix: Adds a savory onion flavor. * Cream of chicken soup: Makes the stew richer and creamier. * Cream of celery soup: Adds a delicious celery flavor. * Cream of mushroom soup: Gives the stew a deeper, savory taste. If using a cream soup, stir it into the diced tomatoes before adding them over the chicken. You can also add a little broth if desired, but the vegetables and pumpkin will release their own juices as they cook. The beauty of this recipe is that you can make it your own! Use your favorite vegetables, seasonings, and optional additions to create a delicious meal. Enjoy your homemade Chicken Stew Baked in a White Pumpkin! ❤️ #pumpkin #dinner #chickenstew #fyp #viral
