Curried Red Lentil Soup 1½ cups red lentils, rinsed 1 can lite coconut milk 1 can diced tomatoes 4 cups vegetable broth 2 cups fresh spinach 1 yellow onion, diced 4 cloves garlic, minced 1 tbsp fresh ginger, grated 2 tbsp curry powder 1 tsp turmeric ½ tsp cumin Sauté onion until soft. Add garlic, ginger, and spices—cook 1 minute. Add lentils, tomatoes, coconut milk, and broth. Simmer 20-25 minutes until lentils are tender. Stir in spinach until wilted. Season with salt and pepper.
