Baking therapy 🍓✨ Glazed Strawberry Loaf Cake 🤍 Ingredients:  2 eggs  150 g granulated sugar (3/4c) 50 g brown sugar (1/4c) 60 g melted butter (1/4c) 60 g oil (1/4c) 1 tsp vanilla  120 g whole milk (1/2c) 1.5 tsp vinegar  180 g all purpose flour (1.5 c) 2 tsp baking powder  1/8 tsp baking soda  1/4 tsp salt  150g sliced strawberries (1.5c) 90g white chocolate (optional) (1/2c) For the glaze:  2-3 pcs strawberries  1 tbsp milk  60g icing sugar (1/2c) Instructions:  1. Make the buttermilk by combining the vinegar and the milk, let this stand for a few minutes until the milk starts to curdle. 2. In a mixing bowl, whisk together the eggs and the sugar. Then add the melted butter, oil, vanilla, and the buttermilk. Mix until well combined.  3. In a separate bowl, whisk the dry ingredients together : all purpose flour, baking powder, baking soda, and salt.  4. Add the dry ingredients to the wet ingredients and mix until no streaks of flour remain, make sure not to over mix.  5. Coat the strawberries and the chocolate chips with a little flour then fold into the batter (this is to prevent them from sinking to the bottom of the loaf). 6. Pour the batter into a lined 9x5 inch loaf pan and bake at 350F (180C). Bake for 45-60 mins in total or until a toothpick inserted comes out clean. ‼️Important: Loosely cover the loaf with an aluminum foil at around 25-30 mins in to prevent too much browning.   7. To make the glaze, mash the strawberries and push through a sieve to get the juices.   8. Add the strawberry juice and the milk to the icing sugar and mix well. If the icing is too thick, add more milk 1/2 tsp at a time. If the icing is too runny, add more icing sugar 1 tablespoon at a time.  9. Once the loaf is baked, let it cool in the pan for 10-15 mins then transfer to a cooling rack to cool completely.  10. Lastly, pour the strawberry glaze and top and decorate with more strawberries if you like 🍓 NOTES:  •You may also bake this in an 8x4
