The closest gluten free bread so far and I tried over 10 brands at least is Schar- deli style sourdough bread. After tossing it may be even mistaken for wheat.

the glutin of today was developed for starving countries , who used to grow rice with no food value. They had trouble growing legumes so they created wheat with protein rich glutin , easy to grow and to eliminate starvation in those nations. Europe does not like North American wheat.
