Just so you know for next time: The calcium should measured to be 20% of the liquid you need to encapsulate; The alginate should also be around 5% per liter of water; When you blend the alginate-water mixture, you should absolutely leave it in the fridge for 2-3 hours to remove all of the air; Last thing if you wanted to leave the olive brine to be fully liquid inside the egg yolk, you should just remove the xanthan gum.
