They’re packed with protein, full of flavor, and make the perfect meal prep. Ingredients Roasted Sweet Potatoes • 4 large sweet potatoes, peeled and diced • 1 tbsp olive oil • 1 tsp paprika • 2 tsp garlic powder • 1 tsp onion powder • 1 tsp salt • ½ tsp black pepper Ground Beef • 2 lbs lean ground beef  • 1 yellow onion, diced • 2 tsp garlic powder • 1 tsp onion powder • 1 tsp chili powder • ½ packet taco seasoning (I used Siete Spicy Taco Seasoning) Spicy Ranch Greek Yogurt Sauce • ¾ cup plain nonfat Greek yogurt • 1 tbsp ranch seasoning • 1 tbsp hot sauce • Juice of ½ lime • ½ tsp garlic powder • 1–2 tbsp water (to thin) Directions 1. Preheat your oven to 425°F. 2. Peel and dice the sweet potatoes. Toss with the olive oil, paprika, garlic powder, onion powder, salt, and pepper until evenly coated. Spread onto a baking sheet in a single layer and roast for 30–35 minutes, flipping halfway through. 3. While the sweet potatoes are roasting, cook the diced onion in a large skillet over medium heat for 3–4 minutes. Add the ground beef and cook until browned. 4. Stir in the garlic powder, onion powder, chili powder, and ½ packet of Siete Spicy Taco Seasoning. Cook for another 2–3 minutes until well combined. 5. In a small bowl, whisk together the Greek yogurt, ranch seasoning, hot sauce, juice of ½ lime, garlic powder, and enough water to make a smooth, drizzleable sauce. 6. Divide the roasted sweet potatoes and seasoned ground beef evenly into meal prep containers. Top each bowl with shredded cheddar cheese, then drizzle with the spicy ranch Greek yogurt sauce or store the sauce separately until you’re ready to eat.
