The original idea was that humans are harvested for their processing power (because our brains can do a lot of work with very little energy) but the producers with their focus groups figured that that was too complicated for the average viewer to comprehend and went with this nonsense instead.

also they don’t feed “food” , they liquify the dead organic and feed that to them. maybe machines can’t use the organic feed as efficiently as humans or maybe many mavhines enjoy having a purpose in the matrix which needs an interconnected human brain.
