You’ll need: • 1 kg peeled potatoes • 350 ml milk • 350 ml cream • 300 g butter • Fresh thyme • Fresh rosemary • Bay leaf • Salt & pepper Instructions: 1. Cook the potatoes in a pot or sous-vide (in a vacuum-sealed bag) in a steam oven for about 40 minutes. 2. In a saucepan, bring the milk, cream, and butter to a boil. 3. Add thyme, rosemary, bay leaf, and black pepper. Let it infuse for a few minutes. 4. Make your mashed potatoes, then mix in the infused milk mixture. 5. Pass the mash through a fine sieve to make it ultra-smooth. 6. Pour into a siphon, charge with two gas cartridges, and shake well. 7.
