@bikinibitesbyk: I wish this wasn’t true… Part 1: Valentines Day Series Recipe for Crackle Top Gooey Molten Brownies: Ingredients (8 x 8-inch pan) • 1/2 cup (113 g) unsalted butter • 2/3 cup (60 g) Dutch-processed cocoa powder • 1/2 teaspoon fine sea salt • 1 1/4 cups powdered sugar • 1/4 cup light brown sugar • 2 large eggs, room temperature • 1 1/2 teaspoons vanilla extract • 1/2 cup (60 g) all-purpose flour • 3/4 cup (140 g) semi-sweet chocolate chips • 1/4 cup chopped chocolate bar Instructions 1. Preheat oven to 350°F Line an 8 x 8-inch light-colored metal pan with parchment paper. 2. Add cocoa powder and salt to a heatproof bowl and set aside. 3. Brown the butter until golden and nutty. Pour over cocoa mixture and stir smooth. Cool until warm. 4. Whisk eggs and powdered sugar HARD for a full 60 seconds until glossy and smooth (no graininess). 5. Stir vanilla into cocoa butter mixture, then mix into egg mixture until thick and shiny. 6. Stir in brown sugar, then gently fold in flour just until combined. 7. Set aside one-quarter of the batter. Fold chocolate chips into remaining batter and spread into pan. 8. Smooth reserved batter on top for a crackly finish. 9. Sprinkle 1/4 cup chopped chocolate bar on top before baking for melty pockets. 10. Bake 20–25 minutes until glossy on top and slightly jiggly in the center (200°F internal temp) 10.
