Peel and slice shrimp into bite size pieces. 2. Cook shrimp for 3-5 mins until the color changes orange. 3. Drain and give it a quick rinse. 4. In a bowl, add shrimp and all the ingredients listed above. 5. Taste test and adjust if needed. 6. Place the cooked mung bean vermicelli noodles on the lettuce and finish with the shrimp on top.
