I never understood a wagyu burger. Wagyu is fatty beef and you can add or subtract as much fat as you want from a burger anyways.

Not true, had Japanese wagyu burger in Japan, and you can 100% taste the Wagyu

One of the hardest things for a regular consumer to find anymore is decent quality burger meat. For a while I thought maybe it was just me and because I'm old (age doesn't help the taste buds), but during the beginning of covid, I bought hamburger meat from a mom & pop grocer and it was flavorful, tender and no icky bits. They never had it again- always wondered what meat cuts went into that.

99% of wagyu beef burgers are not genuine wagyu. They are usually just standard beef mince with a high fat content.

It’s just a breed of cattle and the Wagyu being used for burgers here is “American Wagyu” which is crossbred with Angus. It doesn’t have the marbling of true Wagyu and is firmer. Their life is the same as Angus dude.

Are you condoning waste? What do you do with the chucks and roast size pieces of meat and trimmings? I would agree its dumb to grind up a Wagyu ribeye or filet but what about the rest?

Yeah, in fairness - I’ve made them a couple of a time - if you’ve got a bit of spare trim, go for it, but don’t be grinding a full steak or anything - my 2p at least
