Why would you make all the mashed potatoes for the shift at the beginning of the night? Why not just make them throughout the shift as you need them. And then just waste the little bit of leftover you have at the end of the night. Why the hell would you use leftover mashed potatoes? You can’t make them taste fresh. I don’t care what you’re doing to them. What kind of hack joint are you working at? I make mashed potatoes three or four times a night. You think it’s a big deal whether you use fresh lime juice or bottled lime juice in someone’s margarita, but you would serve day old mashed potatoes. Who trained you?

used to portion it out into vacuum sealed bags and then hot hold in a sous vide. actually worked pretty good

Dude. This is my problem but with fruit. I despise old fruit and my bar cuts massive backups so you are always getting old fruit and I just cut my own fresh on the DL. I’ve tried to give them pars and explain how to minimize waste but it falls upon deaf ears. But they are crazy if they think I’m putting a brown, dry sucked-on looking lime on a $18 dollar drink.

Crazy that you save mashed potatoes for the next day. Mash potatoes shelf life should be 1 shift. Only make what you'll use.

The day old mashed potatoes are actually better (for digestion) because by being cooked then cooled they create resistant starch, which acts as a prebiotic fiber to improve gut health and reduce blood sugar spikes.

Mashed potatoes were always a make fresh daily thing. We never saved them. They sat in a bain for service, no problem.

Good to know. We went to a restaurant right at the start of dinner shift and I ordered mashed potatoes. They were cold at the bottom of the scoop which was so disappointing. Felt like they’d been reheated in a tray that wasn’t quite reheated through before they served them.

Work in a seaside town steakhouse on the east coast. 1000 covers per day in the summer and maybe 100 if we’re lucky per day in off season. A few caveats? We’re open for lunch & dinner. Big differences: we serve sandwiches at lunch not at dinner. The only potatoes we have at lunch are fries and wedges. Only at dinner do we accommodate mashed & baked potatoes. Hollandaise & béarnaise are all only available at dinner. Usually throw out a 1/3 pan or less of mashed potatoes at the end of the night.
