Spiced Mulled Wine 👇🏻 If there was one drink that summed up all the Christmas flavours and atmosphere, for me it would be mulled wine. It reminds me of winter markets, coming in from the cold and sitting around the fireplace. (All things that will have to live in my imagination as I'm in Australia 😅) This recipe is inspired by Jamie Oliver’s mulled wine recipe, and as usual, I have changed a few things to suit what I had, local produce and to taste. There's no rules with this one-adjust the spices and flavours to your liking! Ingredients: 2 bottles of any red wine 3 oranges Peel of 1 lemon 200g caster sugar 6 whole cloves (or 1/2 tsp ground cloves) 1-2 cinnamon sticks (or 1/2 tsp ground cinnamon) 1/2 whole nutmeg freshly grated (or 1/2 tsp ground nutmeg) 3 star anise 3-5 tbsp brandy (measuring optional- I measured with my heart) Method: Into a large saucepan, add the sugar, lemon peel, and the juice of 2 oranges. Stir over medium heat until the sugar has dissolved. Add in the cinnamon, star anise, nutmeg and cloves, followed by one bottle of red wine and one orange cut into slices. Simmer for 5 mins to infuse the wine with the flavours. (Simmering the wine will reduce the alcohol content, so if you want it to be low alcohol then add both bottles of wine with the spices and simmer. If you would like to retain the alcohol in the wine, add the second bottle of wine to the pan after it has been simmering for 5 mins). Add the second bottle of wine and the brandy (if you are using it) and heat just for a few mins until you have reached the desired temperature to drink.
